Peel garlic cloves and place in food processor (I use a Magic Bullet) with salt, pepper, cumin, coriander, cilantro and dash of Hot sauce. Process until garlic is chopped and spices are blended. Add avacado flesh, depending on the capacity of your food processor, one at a time with one tbsp of lime juice. Process until avacado is smooth. Repeat for each avacado, adding 1 tbsp lime juice each time. More lime juice may be required to keep everything moving in the food processor while processing, add a tbsp at a time until mixutre is smooth. Remove from food processor and fold into bowl with sealable lid. Placing an avacado pit on top of the guacomole will slow the surface from browning in the fridge. Refrigerate for 1 hour to mellow flavours or can be used right away.
