Shrimp and Crab Ceviche Tostadas


"This ceviche recipe uses cooked shrimp and imitation crab meat, so you can be enjoying these tostadas in less than two hours. The guacamole spice mix adds just the right amount of heat and extra flavor. If you like it extra spicy, add the jalapeno pepper. I'm always asked to bring this to get-togethers, and it goes fast!"

  1. In a large bowl, combine shrimp, crab, tomatoes, onion, celery, avocado, cilantro, jalapeno (if used), lemon juice, guacamole mix, salt & pepper. Refrigerate for 1-2 hours.
  2. Fill medium-sized skillet with vegetable oil to 1 inch. Heat on medium-high. Fry tortillas until crisp and lightly browned, turning occasionally. Remove tortillas and place on paper towels. Sprinkle with salt, if desired. Place a paper towel between each tortilla to soak up oil prior to topping with ceviche. Top each tortilla with approximately 1/2 cup prepared ceviche.
