In a large bowl, combine shrimp, crab, tomatoes, onion, celery, avocado, cilantro, jalapeno (if used), lemon juice, guacamole mix, salt & pepper. Refrigerate for 1-2 hours.
Fill medium-sized skillet with vegetable oil to 1 inch. Heat on medium-high. Fry tortillas until crisp and lightly browned, turning occasionally. Remove tortillas and place on paper towels. Sprinkle with salt, if desired. Place a paper towel between each tortilla to soak up oil prior to topping with ceviche. Top each tortilla with approximately 1/2 cup prepared ceviche.
