set the stove on high, heat saute pan with oil, add onions and garlic saute until the aroma is released. Add pork and saute until light or golden brown but not thoroughly cooked. Throw in some bay leaf and peppercorn, add in soy sauce and water, mix, set the stove on low, cover the pan and wait until it simmer. Then add the vinegar but this time don't mix the dish and don't cover it until the sauce and the vinegar boils down for approximately 3-5 minutes. After it boils, add some basil and sugar, place back the lid and wait until the pork becomes tender and the sauce is reduced to half or until the sauce thickens. Turn off the stove and serve the dish with a steaming cup of rice.
