  1. Heat oil in large soup pot.
  2. Add onions, carrots, celery, and garlic. Saute about 5 minutes to soften.
  3. Add broth and bring to a boil.
  4. Add split peas (after rinsing), and boil for 5 minutes.
  5. Add water, orange juice, and ginger, and simmer for 35 minutes (covered and stirring occasionally).
  6. Add red pepper, and simmer for an additional 10 minutes or until peas are desired softness. I like mine slightly firm, so you may need to simmer longer.
