  1. Fry the pancetta and chopped garlicin olive oil until crispy but not burned
  2. Add the chooped sundried tomatoes and pine nuts
  3. Fry for a minute and set aside
  4. In a seperate pan fry the chicken in Olive Oil being careful not to over cook, once cooked and the pesto and stir.
  5. Transfer the chicken to the pan conatining the pancetta
  6. Once the pasta has cooked add it to the pan over low heat and drizzle some olive oil on top.
  7. Season to taste.
  8. Arugola and truffle olive oil may be added over the pasta before serving.
