  1. Grate zucchini into a collinder
  2. Squeeze out as much water as possible with paper towels.
  3. Sprinkle with a pinch of salt and let sit with paper towels for 30 minutes
  4. In a small mixing bowl, combine eggs, basil, garlic, green onions, pepper, cheese, onion powder and nutmeg
  5. Mix in zucchini
  6. Add butter and oil to frying pan
  7. Drop zucchini mixture into pan (I find it easiest to do this by forming medium size balls with your hands and carefully placing them into the pan since there is no flour added to bind them together)
  8. Brown for one to two minutes on each side
  9. Serve with salsa, sour cream, cream cheese or whatever low carb side you like!
