  1. Cook 1 1/2 cups brown rice according to package instructions.
  2. Meanwhile, mix together bell pepper, onion, raisins, peas, and olives in a separate bowl; set aside.
  3. Whisk together mustard, balsamic vinegar, and vegetable oil in another bowl; set aside.
  4. Once the rice is done, add the vegetable mix, salt and pepper, and the desired amount of dressing (store the rest in an airtight container).
  5. Add feta cheese just before serving. May be served hot or cold.
