  1. in a pyrex bowl add oil and whisk in flour to mix and remove any lumps.
  2. Set microwave to 70% power rating and microwave for six minutes.
  3. Stir and if you want darker roux microwave for another 2 to 3 minutes until it is the color you want.
  4. Do not add the hot roux to hot stock. Put the roux in pot on medium low heat and then slowly add cool ingredients while stirring.
