Original recipe yields 6 servings

  1. Drizzle sweet potatoes with olive oil and season with salt & pepper.
  2. Wrap in foil and bake at 375 approximately 35 minutes or until cooked through. (This can be done the day before).
  3. In large skillet add peppers and onion, saute until soft.
  4. Add chorizo to skillet along with peppers and onions, brown.
  5. Beat eggs and add to skillet, mix until scrambled.
  6. Assemble sweet potatoes, chorizo & egg mixture, shredded cheese and Siracha sauce (if desired) to tortilla.
  7. Roll into burrito and enjoy!
