  1. Cut meat into small pieces roughly 1/4- 1/2 inch or so, like Carne Asada size. Put in bowl with juice of one lemon, salt, pepper and 1/2 of a chopped onion.
  2. Let that sit while you chop up two Chipotle peppers. Reserve sauce for another use, or toss with meat for a stronger flavor of sweet bbq chipotle.
  3. Heat oil in skillet. Add meat and peppers, cooking on medium high high heat. Stir frequently. Cook for 3-4 minutes until done to your taste.
  4. While meat is cooking, heat tortillas in small skillet or microwave, until flexible. 20-30 seconds per tortilla.
  5. Assemble tacos with meat and toppings- enjoy!
