  1. Boil 2 cups water with 1/4 cube vegetarian bouillion in medium saucepan.
  2. Once boiling, add 1 cup long grain rice and cover.
  3. Let rice simmer for 20-23 minutes (check package directions).
  4. Simultaneously hardboil 4 eggs in medium/large saucepan.
  5. Rinse kidney beans and place in large bowl.
  6. Chop or mash hardboiled eggs and add to kidney beans.
  7. Add cooked spinach to bowl.
  8. Add cumin to bowl.
  9. Add mustard powder to bowl.
  10. Add black pepper to bowl.
  11. Once fully cooked, add cooked rice to bowl.
  12. Mix all ingredients thoroughly.
  13. To serve: place in bowls and top with 1 tablespoon low-fat italian dressing (to add moisture and flavor)
