Chipotle Black Bean Soup

"This is a easy black bean soup with the smoky flavor and kick of chipotle peppers. Resist the urge to add any salt as the bacon and canned beans already bring enough salt to the soup the balance the dish perfectly. I used bacon ends for this recipe because they are cheap, if you can't find them, choice bacon is fine to use."

  1. Heat skillet over medium high heat and sauté the Bacon, Onion and Garlic only soft, do not cook through, about 5-7 minutes. Remove from heat and drain well.
  2. In a 5 quart stock pot, add Chipotle Peppers with reserved sauce, Black Beans with reserved juice, Chicken Broth, Worcestershire, Ground Pepper, Smoked Paprika, Cilantro and sautéed Bacon mixture. Simmer over medium low heat for 45-50 minutes.
  3. Serve hot with a dollop of sour cream and Tostones (Fried Plantains).
