Vegan coconut Caramel


"I use this caramel for making diary free twix bars! It has a delicious caramel flavor, and is just as yummy as all those non-vegan alternatives out there. In fact, I'm not vegan, and I prefer it! You could make it a little harder to just use as caramel candies, or a little runnier for dipping caramel apples."

  1. Mix together all of the ingredients in a large sauce pan
  2. Heat on low, watching carefully and stirring occasionally
  3. When the mixture reaches 236 degrees, remove from the heat
  4. If you want a harder caramel, continue to heat until soft ball stage is reached.
  5. Mix in any grease that has separated from the mixture. This could also be poured off.
  6. For home made twix bars, drizzle over the cookie of your choice, then coat with chocolate
  7. For caramel apples, carefully spoon over apples (or dip the apples)
  8. For caramel candies, oil a baking dish (I use a 9x9" pan) and dust with powdered sugar. A tiny muffin tin would also be good here. Poor mixture into the dish and let cool. Sprinkle with chocolate chips or toffee pieces for an extra treat!
