Easy Shrimp in Creamy Basil Sauce

"One of our family traditions is to have shrimp for dinner on Christmas Eve. This recipe is my most often requested shrimp dish. How can you go wrong with basil and tomato? This wonderfully creamy sauce is a perfect complement to any pasta."

  1. Prepare pasta according to package instructions for al-dente.
  2. Meanwhile, in large non stick pan, melt 2 tbsp. butter over medium-high heat.
  3. When butter is sizzling, add the shrimp, sauteeing until almost done.
  4. Remove shrimp from pan and set aside.
  5. Add the rest of the butter to the pan, along with the garlic.
  6. When butter has melted, add the flour, salt and pepper forming a roux.
  7. Add 1 1/2 cups of half and half, stirring constantly. If sauce becomes too thick, you may add an additional 1/2 cup half and half.
  8. When thickened to desired consistancy, toss in tomatoes and basil.
  9. Return shrimp to pan and allow to finish cooking through (about 2-3 minutes).
  10. Serve over warm pasta.
