Healthy Stuffed Peppers

"These peppers are hearty, delicious and healthy too. The filling is made in one pot and it bakes for 20 minutes! For the rice, I use Uncle Bens 90 second rice."

  1. Preheat oven to 350.
  2. Cut the tops off peppers and clean out all the seeds.
  3. Boil peppers in water for 2-3 minutes then place in an ice bath to stop the cooking process. Dry out peppers on a papertowl.
  4. Saute onion in 1 T olive oil for 2 mintutes, add the turkey and cook for about 5 minutes.
  5. Add garlic and cook until the tukey is no longer pink.
  6. Drain off fat.
  7. Add 1/2 of the tomato sauce, rice and most of the parmesean cheese, reserving a few tablespoons.
  8. Spread 2 T of sauce on botton of a baking dish.
  9. Fill peppers with turkey mixture, topping each one with sauce and a sprinkle of cheese.
  10. Cover with foil and bake 20 minutes.
  11. Remove the cover and bake 5 more minutes.
