  1. 1)Place frozen lotus stems in a bowl and add 1/4 cup water.Microwave for 5-7 mins.Keep aside.
  2. 2)Wash and dice potatoes and microwave in 2 tbsp water for 5 mins.Keep aside.
  3. 3) In a pan heat oil and add cumins seeds, garlic, ginger and green chillies.Cook on low for 5 mins.
  4. 4)Add lotus stems and cook for 10-15 mins on medium high heat.
  5. 5)Add potatoes and cook for 10 mins.
  6. 6)Add tomato sauce and all dry spices.
  7. 7)Add 2 cups of water and cook for 20 mins till lotus stems are soft and fully cooked.
  8. 8)Add salt to taste.
  9. 9)Garnish with coriander and serve hot with basmati rice or roti.
