  1. 1)Heat oil in a pan and add cumin seeds till they sizzle.
  2. 2)Add ginger, garlic and green chillies.Cook for 2-3 mins.
  3. 3)Add onions and sugar and cook till almost caramelized.
  4. 4)Add tomatoes, tomato paste and all dry spices except garam masala.Cook for 15 mins.
  5. 5)Grind mixture to a smooth paste and return to pan.
  6. 6)Add jackfruit pieces and cook for 20-30mins till its cook through. If using canned jackfruit, then cook for only 10 mins.
  7. 7)Add garam masala and salt to taste.
  8. 8)Garnish with cilantro.
  9. 9)Serve hot with steamed rice.
