  1. 1)Cook rice the day before and cool.
  2. 2)Heat 2 tbsp oil in a pan and add mustard seeds.
  3. 3)Once mustard seeds pop, add curry leaves, green chillies, turmeric and sambhar powder.
  4. 4)Add rice and mix well with spices.
  5. 5)Take off heat and add lemon juice.Mix well
  6. 6)Add salt to taste.
  7. 7)Garnish with cilantro and roasted channa dal.
  8. 8)Serve hot
