Black Bean Soup


"I love black beans, and this recipe is no exception. Not to mention, it takes less than 30 minutes to prepare, and it’s a low-cost meal. This soup is tasty with crusty french bread, tortillas, or cornbread. I personally love tortillas or tortilla chips."

  1. Render bacon in large heavy pot. Stir in onions, then carrots, celery, garlic, and jalapeno. Add sherry to deglaze, let cook down until almost dry. Stir in broth, tomato sauce, Worcestershire, and seasonings. Stir in ½ beans, bring to boil. Lower to simmer, blend with hand blender. Add rest of beans, adjust seasonings and broth amount, if needed. Simmer 10-15 minutes.
