  1. 1) In a bowl combine flour, baking powder and salt.
  2. 2) Add water until a soft dough forms. (you may not need all the water.)
  3. 3) Knead for 2-3 mins.
  4. 4) Form into a ball
  5. 5) Add Olive Oil
  6. 6) Let rest for 1/2 hour
  7. 7) Divide into two balls
  8. 8) Roll out on floured board into a 1/2 inch thick flat circle
  9. 9) In a heated frying pan/griddle over medium heat place Roti
  10. 10) Let cook for 1-2 mins and then turn over and let the other side cook until browned
  11. 11) Roti should swell in the center a bit if not place in microwave for 30 secs and watch until swollen
  12. 12) Cut and serve
