"This Coffee Cake Recipe is fantastic! I made them for my mother so she could eat it for breakfast and she fell in love with it. Just so you know it needs a food processor. If you have to go out and buy one.. it's worth it! I made it over and over and over. I hope you like it!"

  1. For the oatmeal crumb: Combine butter, brown sugar, only 1/2 cup oats, flour and cinnamon in a food procssor. Process until it becomes crumbly. Put in a bowl and add the remaining 1/2 cup oats and walnuts. Stir until blended.
  2. For the cake: Preheat oven to 365*F. Coat an 8-inch square pan with cooking spray or butter.
  3. Sift 2 cups flour, baking powder, cinnamon, and baking soda together in a large mixing bowl. Whisk eggs and brown sugar in a medium bowl intil well blended, gradually whisk in buttermilk, oil, and vanilla. Add the wet ingredients to the dry ingredients in 2 additions, stirring each time to throughly blend the ingredients together.
  4. *Add the blueberries if wanted (optional)
  5. Spread half the batter in the prepared pan. Sprinkle half the oatmeal crumb evenly on top. Put the remaining batter over the crumbs and top with the remaining crumb.
  6. Bake the coffee cake for 30- 40 minutes or until it turns brownish and a toothpick inserted in the center comes our clean. Then, let it cool for 2-5 minutes before eating so it doesn't fall apart. Serve warm. Yummm!
