Original recipe yields 10 servings

  1. place fish in food processor till smooth
  2. tip into large bowl and stir in eggs, cream, curry paste, salt, kaffir lime leaves, beans and lemon juice
  3. shape into patties not any bigger than the size of your palm
  4. heat oil in frypan
  5. shallow fry patties till golden on both sides
  6. remove from pan and place on paper towel before serving
  7. for the dipping sauce
  8. place sugar, vinegar and fish sauce and chilli into saucepan and simmer for 5 min
  9. pour into heatproof bowl and allow to cool
  10. add other ingredients and serve on the side with patties
