Cut off very tops of garlic heads (so that cloves are exposed). Place each head on a small sheet of foil and drizzle with olive oil. Wrap tightly and bake in oven for about 45 minutes.
Open, drain, and rinse white beans.
Use processor to chop cooked bacon. Remove 1/4 cup of bacon and reserve for garnish.
Squeeze roasted garlic into bowl of processor with remaining bacon. Add olive oil and beans and pulse. Add salt and pepper. Pulse to mix. Add liquids and pulse until dip comes together and has a smooth consistancy using more or less as required.
Taste and add salt or vinegar as needed.
Serve hot or cold sprinkled with remaining bacon. Great with Pita Chips.
