  1. Combine flour, salt and sugar in a large mixing bowl, and mix thoroughly.
  2. Heat milk and water to the proper temperature, and combine.
  3. Add milk and water to the flour mixture, stirring quickly with a whisk.
  4. Stir well until the batter is thick but smooth.
  5. Cover with a tea towel or cling wrap and allow to rise in a warm place for 1 hour.
  6. Mixture will appear spongy. Stir well once again to remove excess air.
  7. Pre-heat pan on medium low heat, and add metal cookie cutter.
  8. Spray both pan and cookie cutter with non-stick spray and let heat up.
  9. Pour batter into cookie cutter, fill just about half way up.
  10. Allow batter to cook until bubbles have formed and popped on the surface.
  11. When it appears mostly dry, remove cookie cutter with tongs.
  12. Crumpet should cook for approximately 5 mins total, or when the surface is mostly dry.
  13. Flip crumpet over in pan, and cook for an additional 1-2 minutes.
  14. Place on wire rack in a warm oven, and cook remaining crumpets.
  15. Serve warm with butter, or topping of your choice.
