  1. Slice the onions thinly, you can use a mandolin for this if you want.
  2. Boil the eggs. I love them hard boiled and slice them into 2.
  3. Add oil to a warm pan. (add mustard seeds at this stage. when the seeds splutter add the rest as follows)
  4. Add a little bit of grated ginger and curry leaves.
  5. Saute gently
  6. Add the onions and let them cook for at least 3-4 mins or until the raw smell goes away & the onions are translucent
  7. Add the garlic paste and saute until you can smell the aroma of garlic cooking and not the its rawness.
  8. Add the Tumeric powder, chilli powder, coriander powder, salt and saute on low heat for 2 mintutes. Be careful not the burn the spices.
  9. Add the tomatoes and tomato paste and mix until they tomatoes are cooked. Sprinkle 1/4 cup water if it is too thick.
  10. Add the boiled & cut eggs. Stir gently to coat the eggs with the gravy.
  11. Make sandwiches or stuff them in roti and pita. Or eat it with rice and yogurt.
