  1. Prepare the Zataran's Black Bean Rice using 1/4 cup less of water than directed.
  2. Once the rice is cooked, spread in an 8x8 baking dish and cool in the refridgerator.
  3. While the rice is cooling, mix the taco seasoning with the sour cream.
  4. Once the rice is cool, spread the sour cream mixture evenly over top.
  5. Sprinkle cheese, olives, and tomatoes.
  6. Serve cold with tortilla chips.
