"Incredibly easy and so delicious! I created this by accident one night as a side dish but love it so much I eat it as a main meal! This makes enough for one but can be easily be increased to feed more."

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Peel and chop squash into medium-small pieces.
  3. Place chopped squash into a baking dish and pour in olive oil. Toss to coat.
  4. Sprinkle salt and pepper onto squash and toss again.
  5. Place in preheated oven for 40 minutes or until squash is lightly browned. Take out, sprinkle on Parmesan cheese. Put back in oven for 5 minutes or until Parmesan begins to melt.
