  1. 1. Bring chicken broth to boil in medium saucepan: add coucous, remove from heat, cover, and let stand 5 minutes.
  2. 2. Fluff cousous with fork and transfer to bolw.
  3. 3. Stir in tomatoes, cilantro, red chili, green onions, lima beans, and Queso Fresco.
  4. 4. Whisk together lemon juice, olive oil, and pepper.
  5. 5. lightly toss salad and dressing, and chill for 2 hours or more.
