  1. Preheat oven to 180c.
  2. Coat red snapper fillets with paprika, salt and pepper.
  3. Using extra virgin olive oil, lightly sear both sides of fillets on frying pan over med-high heat then place in baking dish.
  4. In the same frying pan, add garlic, ginger, shallots, tomato and lemond rind and fry for 1 min.
  5. Add white wine and season with salt and pepper.
  6. Add butter, lower heat and simmer for 2-3 mins.
  7. Place lemon slices on top of fillets.
  8. Pour contents of the pan over the fish and bake in the oven for another 15 to 20 mins (depending on the size of the fillets).
  9. Serve with steamed jasmine rice.
