"I invented this recipe while camping,so an open fire with a grill,barbecue,stove top,oven,just about anything will work.It was originally used with 20 little brook truot 6-12 inches but i found it works very well with larger fish too.It is a sweet,almond flavor and is incredible tasting skin and all!!."

Original recipe yields 4 servings

  1. salt and pepper fish inside and out
  2. place 2-3 onion shoots in each cavity
  3. place 1 tbs each of butter and amaretto in cavity
  4. let rest
  5. place foil on grill wider than area of fish
  6. start grill heat to medium
  7. place 4 tbs butter on foil and melt and spread around
  8. sprinkle a single layer of sliced almonds on foil
  9. drizzle liquor on top of almonds saute almonds lightly
  10. layer fish on top of almonds
  11. cook for 4-6 min covered if possible
  12. flip fish over and uncover
  13. drizzle more liquor,butter on tops of fish
  14. off to side saute the rest of almonds with same mixture
  15. cook untill amaretto carmelizes and skin gets sticky
  16. fish will be fair to med dark,almonds dark golden
  17. serve hot off the grill with carmelized almonds on top
