In a large bowl Mix together the crushed garlic, black pepper, roemary, lemon(or lime) zest, 3 tbsp olive oil and a pinch of salt.
Now add the chicken and rub the marinade thoroughly into the chicken.
Mix together the juice of one lemon(or lime), tomato paste and white wine. Leave until instructed.
Heat the rest of the olive oil in a pan and add the onions, mushrooms, yellow pepper, tomatoes and olive. gently fry until the mushrooms and onions are soft, then mix in the marinated chicken and cook until browned.
Add in the wine mixture, and italian herbs and leave to simmer until chicken is cooked serve with rice and mixed sald.
