  1. In a pan, heat the oil.
  2. When very hot add the chicken and sear all over, about 2-3 mins.
  3. Reduce heat to medium and add the garlic, half the scallions and chilli and stir fry 1-2 mins.
  4. Add the lime zest and juice and fry 1 mins.
  5. Add the chicken stock and simmer for 10 mins.
  6. Add the cocount milk, herbs, rest of scallions and fish sauce.
  7. Bring to boil then reduce heat and simmer 3 mins.
