  1. Tenderized entire chicken breast with a fork on both sides.
  2. Place chicken in a large baking pan and pour the 16 0z bottle of italian dressing over it.
  3. Cover chicken breast and place in the refrigerator for 2 hours to marinate.
  4. Heat the oil in a 12 inch skillet over medium heat.
  5. Add garlic, sun-dried tomatoes, mushrooms, green bell peppers, and onions.
  6. Cook vegetables until tender and set aside.
  7. Pre-heat oven to 400 degrees F.
  8. Remove chicken breast from refrigerator and place in the pre-heated oven.
  9. Cover and bake in preheated oven until the chicken is tender and no longer pink in the center,(just before the chicken is done add the cooked vegetables)about 45 to 55 minutes.
  10. Remove chicken from liquid and serve on hot buttered rice. Ladle the sauce on top and garnish with fresh chopped parsley and ground black pepper.
