"This is the perfect breakfast for those needing that extra boost of energy to help you make it through a long morning. I don't suggest eating this super breakfast every morning but when you need that extra boost or for a nice weekend brunch, it is the perfect recipe. I used to eat this on game day when I played softball on weekends. Now, I eat it on special occasions when I need that extra strength breakfast."

  1. Dice the yellow onion and set aside. Shred one cup of your favorite cheese and set aside. In a skillet, heat the cooking oil over medium heat and cook the hamburger or sausage patties, turning over once, then set aside. Add a little more cooking oil if needed and cook the hash brown patties, turning over once, until golden, then set aside. Drain the oil, add the opened 12 ounce can of chili con carne, heat until it is piping hot and set aside. Heat 2 tablespoons butter in a skillet and scramble 2 eggs or cook eggs in any manner you wish. On a large serving platter, place 2 hashbrown patties, followed by 2 hamburger or 2 sausage patties, followed by 2 eggs on top of the patties and top with the chili con carne, diced onions and shredded cheese. Add hot sauce to taste.
