Thoroughly mix the thinly sliced and (roughly) peeled apples (try to get 60 slices per apple), 1 TBsp lime juice, 1/2 cup sugar, 2 TBsp flour, 1/2 Tsp ground cinnamon, 1/4 Tsp nutmeg and 1/4 Tsp allspice.
In separate bowl, thoroughly mix 1/2 cup flour, 1/2 cup light brown sugar, 2 Tsp ground cinnamon and 3 TBsp of very soft or melted butter. (Slightly increase ingredients for a larger diameter pie or for a desired thicker top crust.)
Fill pie crust with apple mix and remaining juice making sure it's level.
Cover apples evenly with the crust mix from edge to edge then cover with aluminum foil.
Place in 375 degree preheated oven on middle rack for 26 minutes. Remove foil and continue baking for 25-27 more minutes. Remove from oven and let cool approximately 2-3 hours for optimum cutting performance.
