Healthy Yogurt Chicken Salad

"A delicious chicken salad recipe that is both healthy, fast, and easy! We eat it all of the time at my house, and it is such a great alternative to store bought chicken salad loaded with fat and calories. This recipe has a good balance of nutrients for those of us trying to eat a little healthier, but not willing to compromise on flavor."

  1. Remove skin from cooked rotisserie chicken and discard.
  2. Dice chicken into small chunks
  3. Finely dice celery and shallots
  4. Lightly toast chopped pecans in the toaster oven
  5. Mix together dry ingredients; you may substitute 1 tablespoon dry rosemary if you do not have fresh rosemary on hand.
  6. Add yogurt and mayonnaise gradually to the dry ingredients until the desired consistency is achieved.
  7. Add salt and pepper to taste
  8. Store in the refrigerator at least 4 hours for best taste
