  1. 1. Stuff each pepper with some cheese and a sprig of oregano. Arrange in a loaf pan and place reserved tops around the peppers.
  2. 2. Whisk oil, vinegar, garlic, salt, and pepper in a small bowl. Pour over peppers. Let it marinate at room temperature for about an hour.
  3. 3. Preheat the oven to 400 degrees. Place tops on the peppers. Cook until cheese has melted and peppers are tender (about 15 minutes). Let cool slightly before serving.
