"This terrifice breakfast casserole can be as spicy/hot or mild as you want by adjusting or omitting certain ingredients. It's a great change of pace from "traditional" breakfast casseroles. (ie: meat, cheese, eggs). This recipe was given to me from someone who truly loves spicy food. Through the years, I've toned it down some by opting for omissions. Enjoy!"

  1. Butter a 9x13 backing dish.
  2. Spread 1/3 of croutons on bottom of baking dish.
  3. In a large skillet, cook sausage til browned and broken up.
  4. Add the onion and bell pepper for a few minutes til soft.
  5. Add garlic and chili powder and cook for another minute.
  6. Set aside.
  7. In a bowl, mix the eggs, half-n-half, hot sauce and s&p.
  8. In another bowl, combine the tomatoes, green onions, cilantro, pepper jack and cheddar cheese til mixed well.
  9. Distribute 1/3 of sausage mixture over the croutons and 1/3 of cheese mixture.
  10. Repeat layering crouton, sausage and cheese mixtures making sure to end with the cheese layer.
  11. Pour egg mixture over all the ingredients.
  12. Refrigerate overnight.
  13. Bake the next morning in a 350 degree pre-heated oven.
  14. Bake about 1 hr. 10 min. or till eggs are set.
  15. Let rest before dishing up to your hungry family and friends. Garnish with sour cream, tomatoes or even a hot salsa for more of a kick.
