"Colorful stir fry that's very quick and easy to make. I combine all fresh dry ingredients with store bought Chinese sauces to make a great dish to serve over cracked rice noodles. Great for 1-2 people on the go!"

  1. Finely slice the chicken breasts into small strips to fry.
  2. 1. In a medium pot, bring water to boil.
  3. 2. In a large wok, fry the chicken strips in the vegetable oil on med-high, until cooked through. (~5-7 minutes)
  4. 3. Lower the heat to medium.
  5. 4. Add the chopped peppers (red & green), carrots, and corn. Cook for 2-3 minutes.
  6. 5. At this time add the hoisin sauce and chili paste to the stir fry.
  7. 6. Now cut the somen noodles into 2-3 inch pieces and add to the boiling water.
  8. 7. Lower the water to low and cook for 2-3 minutes until tender.
  9. 8. Drain the noodles in a colander.
  10. 9. Server the noodles on a plate or bowl and spoon the finished stir-fry on the top.
