Chocolate Mint Chip Cookies


"These are some of my husband's favorite cookies. The chocolate and the mint go together so well. They can also be made with Splenda, and they come out okay, too. Another variation is to omit the mint chips and add ½ teaspoon of cayenne pepper to dry ingredients for a kick, or roll in granulated sugar with plain chocolate chips. Yummy!"

  1. Preheat oven to 350°F. Combine flour, cocoa, baking soda and salt in a small bowl.
  2. Beat butter, granulated sugar, brown sugar and vanilla extract in a large mixing bowl until creamy.
  3. Add eggs one at a time, beating well after each addition.
  4. Switch from an electric mixer to a wooden spoon and gradually beat in the flour mixture.
  5. Stir in chips.
  6. Drop by well-rounded teaspoons onto ungreased baking sheets. Bake for 10 minutes, until centers are set.
  7. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
