  1. Heat oven to 325
  2. Place whole squash in microwave for 5 minutes, remove and cut in half then microwave face down for 8 minutes
  3. In a skillet on med-hi melt butter
  4. Add onions and pepper and cook until soft and tender about 10 minutes
  5. Add salt and pepper to taste
  6. Add a splash of olive oil and reduce heat to med-lo
  7. Add garlic and mushrooms and mix well, cook for 5 minutes
  8. Take halved squash and place in baking pan face up
  9. Spoon the mixture into the centers filling to the top and pushing down slightly to make compact
  10. Bake for 25 minutes covered
  11. Remove and sprinkle cheese ontop and replace in turned off oven for 5 minutes or until melted
  12. Allow to sit for 3 minutes
  13. Cut each half in half
  14. Spoon mixture out onto plates (looks like pasta noodles) or servie in shells.
