Ham & Potatoe Bake


"A delicious, comforting dish that will please all palates. A great way to use leftover ham &/or potatoes. I serve this w/salad & crusty bread. Be sure to cut off the bread crust ends & finely process them to use for your fresh breadcrumbs."

  1. Bring stock pot of water to boil & salt water. Peel potatoes & cook in boiling water until tender. Drain in colander & cool to handle.
  2. Reduce heat, add 2 Tbls. butter to pot & saute celery & onion 5 mins.
  3. While sauteing, cube potatoes & then add to celery & onion, along with parsley & desired salt & pepper. Stir well.
  4. Remove from heat.
  5. Grease 7x11" baking dish. Place cubed ham in baking dish.
  6. Pour vegetables over top of ham.
  7. In same pot, pour celery soup & half & half & stir until combined & heated through.
  8. Pour soup over potatoes mixture.
  9. Crumble over bread crumbs, then grated cheese.
  10. Bake uncovered, in preheated oven at 375 aprox. 35 mins., until bubbly.
