  1. Heat chicken broth to a simmer in a sauce pan over low.
  2. Heat olive oil and garlic is a saute pan over medium low until garlic begins to sizzle.
  3. Add the two cups of orzo and saute for 2-3 minutes.
  4. Add spinach and oregano and mix together.
  5. Increase heat to medium.
  6. Start adding the chicken broth one cup at a time.
  7. Stir orzo until broth is absorbed, added a cup of broth until all six cups are incorporated and orzo is soft.
  8. Add salt and pepper to taste.
  9. Add feta cheese if desired.
