  1. preheat oven to 375
  2. beat eggs until smooth
  3. add nut meal, flour, lemon flavoring, and zest, combine well
  4. add sugar, combine well
  5. add ricotta, combine well
  6. pour into greased springform pan
  7. bake 40 minutes
  8. let sit 10 minutes (it will deflate a bit during this time)
  9. serve and enjoy!
