Crab Crusted Salmon

"Salmon fillets are topped with a crab mixture and a crispy cracker topping then baked and broiled. When I prepared this recipe the first time I didn’t use any exact measurements. You can use whatever cracker spread you like. I used pesto and garlic. A tasty way to get some Salmon into the diet. This can serve six depending on the portion size you want. It is great along side some roasted veggies. I hope you like it."

  1. Preheat oven to 400 degrees. Prepare a Baking dish by lightly spraying with non-stick spray. Cut Salmon into serving size portions. In a bowl stir together crab, cracker spread and parsley. Put even amounts on each fillet. In another bowl mix together crumbled crackers and melted butter. Top each crab mixture with equal amounts. Sprinkle lightly with salt and pepper. Bake uncovered at 400 degrees for 20 mins. Turn oven to broil and broil for 2-4 mins. Keeping a close eye on fillets so not to burn topping
