  1. Preheat oven to 375
  2. Strain tomatoes, reserving liquid
  3. Prepare rice according to package directions substituting reserved tomato liquid for some of the water
  4. Brown beef in oven proof skillet
  5. Add onions, peppers and garlic, fry for 2 mins
  6. Season beef and veggies with taco seasoning,oregano and cinnamon
  7. Add in corn and tomatoes, breaking tomatoes apart with spoon
  8. Adjust seasoning with salt and pepper to taste
  9. Stir in cooked rice and 2/3 of the grated cheese
  10. Top with remaining cheese and bake 10 minutes or until cheese melts and casserole is heated through
