"After trying several recipies from this site, I finally combined several ingredients to make this a bit easier to make. This soup taste just like the kind you get at a fancy resturant. You wont be disapointed! WARNING..this isn't low cal or fat free! Which is why it taste so good, however, I am sure alot of it can be subed for lower fat."
1.Thaw the hash browns in the bag while preparing the rest.
2. Put 2-3 tbls of butter in a skillet on medium heat and add the diced onions. Sautee until onions are clear
3. Place in crock pot or large soup pot
4. Place the 2/3 cup of butter in a large skillet on medium/low heat and slowly add flour until it forms a thick paste (roux). Once it is a paste, cook for 1 min on medium to low heat and slowly add the chicken broth and milk. Let mixture cook for several minutes on a medium to low heat just until it begins to thicken slightly (approx 8-10 min). Add the milk mixture to the large pot with the onions.
5. Add thawed potatoes, cheddar cheese, pepper, salt, green onions and crumbled bacon to the pot. Cook on medium heat until potatoes are soft. (approx 20-30min) Just before serving add the entire container of sour cream. Mix well and serve.
