Coat large pan with nonstick spray and saute onion on medium heat till translucent. Add carrots & peas and butter. Stir and allow veggies to thaw. Turn to med-high heat, stir in turkey and rice. Add soy sauce a good 2-3 tbsp at a time until rice takes on color. Push everything to sides of pan, pour sesame oil (about 1 tbsp) in center of pan and stir to coat. Again push everything to sides and break 2 eggs in middle of pan. Scramble in center, stir to combine.
