Not so Corny Tamale pie

Original recipe yields 6 servings

  1. preheat oven to 400 or cornbread package instructions
  2. Saute onions.
  3. Add beef and brown.
  4. Drain black beans and pinto beans,
  5. Add beans to meat mixture.
  6. Sprinkle in cheese.
  7. Stir in tomatoes.
  8. Blend well.
  9. Put in 2-quart baking/casserole dish. *
  10. Mix cornbread according to package instruction.
  11. Spread cornbread mix gently over top of meat mixture. (If you don't do it gently you will wind up mixing the meat into your cornbread).
  12. Bake at 400 for 15-20 minutes or until cornbread is done.
  13. *I use a cast iron skillet, so I am not sure how it would work in a deep casserole dish. One could try putting it in a 9 x 13.
