"A quick vegan style soup that tastes just like Pea and Ham, but better for you! The main Ingredient, Mung Beans have a slightly smokey flavour & are a fantastic source of potassium needed for cardiovascular function and a healthy nervous system. Mung beans also contain fibre needed for the removal of excess cholesterol and old hormones from the body. Their fibre content also makes them great for blood sugar control as it slows down the release of sugars from carbohydrates."

Original recipe yields 2 servings

  1. Boil 1 cup of Mung Beans in 3 cups of water for 40-60 minutes (or until soft)
  2. Drain the Mung beans & thoroughly rinse
  3. Add 1/2 to 1 cup of boiling water (depending on how you like your soup consistency)
  4. add a crumbled vegetable stock cube
  5. salt and pepper to taste
  6. Puree or pulse with a blender or hand mixer until desired consistency is acheived
  7. Serve with a crusty loaf of bread
